Cabernet Franc 2019
A part of our vineyard site series where the label features what we see around the farm and inside the bottle features what we taste from the farm.
After whole cluster pressing our half of Orphan No. 3 (A 50/50 blend of our white Cabernet Franc and Jake Busching's Petit Manseng), we took the skins and stems that remained in the press and tossed them in with one of our fermenting batches of Cabernet Franc. This mimics the Italian ripasso method of adding extra skins to another red fermentation (or repassing them). This not only concentrated the color but brought extra texture and structure to the wine. Aged for 2 years in 40% new French oak, this wine is 100% free run wine (separated from the wine that went in the press) making it clean and pure.
